We love this sort of meal in my house, the kind that makes good use of leftovers and comes together in minutes. Plus, it’s packed with good-for-you ingredients but has flavors that little ones like.
This is sort of a non-recipe recipe: You basically stir together cooked quinoa (simply follow the directions on the package) with just enough marinara sauce to add moisture and flavor. You don’t want to add so much that it’s soupy, but add a few spoonfuls at a time until the quinoa is tinted red and it’s easy to spoon up. I like to use my Veggie-Packed Marinara Sauce for this since it has a nice assortment of produce—I’ve been making it with garden fresh tomatoes, zucchini, and onion—but jarred sauce works too.
You can add shredded cheese or Parmesan if you want, add some scrambled egg, maybe stir in some crumbled sausage, or top with shredded chicken. But you really don’t have to. It’s pretty yummy and healthy comfort food in the simple version.
