I’ve been making egg muffins for years and they were one of the first ways that my oldest enjoyed eggs. In recent years, she’s been liking them a little less…so I was pleasantly surprised to find that she really loves this recipe! (I’m pretty sure that the bacon had something to do with it.)
How to Make Easy Egg Muffins
Baking egg muffins in a muffin tin is one of our favorite ways to serve up eggs. We reach for Nellie’s Free Range Eggs whenever possible since they have more healthy fats than conventional eggs—and they’re often a much prettier vivid shade of yellow! And all you need to do to make this recipe is:
- Crisp-cook your bacon. (You can do this up to a day or two ahead!)
- Stir together the ingredients.
- Bake them up in a greased mini muffin tin.
- Pop them out of the muffin tin a few minutes after they come out of the oven.
- Serve warm or store for later in an airtight container in the fridge for up to 2 days. Reheat for about 30 seconds in the microwave and enjoy.
