Chickpea Cookie Dough (So Yum)
Ingredients
- 14.5 ounces chickpeas (1 can)
- ⅓ cup oat flour (or rolled oats)
- ⅓ cup peanut butter
- ¼ cup honey (or maple syrup)
- 2 teaspoons vanilla extract
- ¼ teaspoon salt
- ⅓ cup dark chocolate chips
Instructions
- Drain and rinse the chickpeas in a colander.
- If your peanut butter and/or honey are firm, warm them for 15 seconds in the microwave in a heat-safe container to make them easier to stir.
- Add the ingredients except the chocolate chips to a food processor. Grind, stopping a few times to scrape down the sides, to make a smooth cookie dough texture.
- Remove the blade. Stir in the chocolate chips.
- Portion out 1 tablespoon-size balls of dough and serve, or store in the fridge or freezer as a future dessert.

This does not taste like cookie dough. Since it doesn’t have sugar, brown sugar or butter I didn’t expect it to but wanted to try it still. It’s still delicious and deserves 5 stars!

They are safe to eat right out of the can, like other beans. They’re already cooked. Just rinse them off and you’ll be good to go. (blending the beans up will help them become easier to digest, too.)

This came out perfect! I wanted it to taste more like regular cookie dough so I used almond butter instead of peanut and was so surprised this taste just like cookie dough! Just made these stuck them in the fridge to firm up we will se how my 2 year old likes them ๐
My very picky four-year-old was so excited to eat this. It tastes just like cookie dough somehow, which is blowing my mind. I substituted the peanut butter for tahini and added a few more oats. I also threw in some ground flaxseed and dried cranberries for extra measure. Super happy with how these turned out. I would comment that it was easier to form into balls after it sat in the fridge overnight and had time for the flavors to all meld together and harden a bit.
