I’ve been on a kick of meal prepping lunches for myself to ensure I have plenty to eat even when the days with the kids are very busy, and this focaccia sandwich is a recent favorite. It’s versatile, filling, delicious, and is a much less expensive version of an Italian sandwich that I might buy at the store…and just tastes SO good.

Ingredients
- 1 loaf focaccia bread (9×13-inches or one batch King Arthur Crisp and Airy Focaccia Mix Kit)
- 1 cup prepared basil pesto
- 4 cups arugula
- 8 ounces thinly sliced fresh mozzarella cheese
- 8 ounces sliced deli turkey
- 8 ounces thinly sliced salami
- 2 roasted red peppers (jarred and patted dry)
Instructions
