A few weeks ago, I made roasted carrots for dinner to go alongside burgers. My toddler thought they were sweet potato fries, which we’d had while eating out at a restaurant on a recent road trip. And even though I let her know what they really were more than once, she remained convinced (and thought that I was very silly for thinking they were carrots!). She happily dipped them into ketchup and munched away. She’s eaten them this way three times now and I’ve decided to let her call them whatever she wants to!
These Easy Baked Carrot Fries are my favorite type of vegetable side. They are easy to prepare (you basically just need to slice them). They cook in just about 20 minutes (with no stirring or tending required). And they are totally delicious.
They also happen to be a wonderful way to entice kids to eat their veggies since the carrots caramelize slightly in the oven and taste a little bit sweet. Plus, they are easy for small hands to hold and a great texture for newer eaters to enjoy. We like them dipped into ketchup of course, but they are pretty yummy on their own. (I particularly like tucking any leftovers into salads for myself.) They don’t always get crispy like real fries, but that has never seemed to matter with my little one.
These baked carrot fries are a simple side to go with burgers or chicken and pair perfectly with ketchup!
- 6-8 medium carrots, sliced into matchstick-size pieces
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- Preheat the oven to 375 degrees F. Place the sliced carrots onto a large rimmed baking sheet and toss with the olive oil and salt.
- Spread out as evenly as possible (this will help them to get a little crisp in spots, which makes them really yummy) and bake for 20-22 minutes or until just starting to brown and are soft in texture. Serve with your favorite dipping sauce.
Add a sprinkle of cinnamon or cumin to add extra flavor.
Drizzle with 1 teaspoon honey before roasting to add extra sweetness.
Use rainbow carrots to add extra color.
