With a busy holiday week ahead for those of us in the US, this week’s meal plan is focused on simple and easy with recipes including easy skillet meals and quesadillas. With a few recipes that make good use of leftovers in the mix, too.

NOTE: I use these plans as a place to start my planning and I simply edit the recipes as works best for me for the week. I assume most families will use them in a similar way, too. Which means I often remove a few recipes to make room in my own schedule for leftovers or takeout and change the servings on each individual recipe as needed.

And for those weeks when I want to build my own plan from scratch? I use the custom meal plan function too! There’s also more info in the FAQs about the basic functionality of the meal plans, so take a look there if you are new to the plans. Comment with any questions of course!
