Two weeks ago, a crazy storm ripped through my central Pennsylvania town. I watched giant trees simply snap in half. I made my kids huddle in the stairway to the basement since the sky was a gnarly shade of yellow and I know that can mean tornadoes. And then we dealt with 5 days of no power.
Truly, I am still thankful this happened during a time of the year when the weather on the following days was lovely. It didn’t matter that we had no air conditioning or heat, which was a huge relief. But it did mean that I had to get creative with how I fed my family because I had just grocery shopped and I didn’t want to wind up throwing out $150 worth of groceries.
It has made me think really deliberately about what I need to have in my pantry to be ready for emergency situations—and what other items I need to have in my emergency kit to make sure I’m prepared next time. And I am totally planning to keep some of the super simple meals we ate in regular rotation, even when we do have power!
