I have been making my One-Pot Broccoli Mac and Cheese for years and wanted one with a distinct cheddar flavor. This easy recipe is it!

This Broccoli Cheddar Pasta is so simple to make in one pan without the need to make a fussy roux.

It’s creamy, rich in vegetarian protein, and has the classic flavor of broccoli and cheddar that is just so good together. You can serve this as a vegetarian meal for kids or pair it with my Baked Chicken Tenders, Chicken Bites, Salmon Nuggets, or Baked Tofu.

  • Broccoli: You can use fresh or frozen broccoli here. You can use a 12 ounce bag of frozen broccoli to save time on prep.
  • Milk: I usually use whole milk in this recipe, though a lower fat option will work too.
  • Cheddar cheese: You will want to use shredded cheddar cheese that melts nicely, such as the ones from brands including Cabot or Kraft. Or you can buy a block of cheddar and grate it on a box grater.
  • Butter: I usually use unsalted butter in my kitchen but salted will work here, too.

TIP: You can add 2 tablespoons cream cheese in with the sauce ingredients to make the sauce extra creamy.

Ingredients

  • 16 ounces pasta (elbow or mini shell or other small shape)
  • 12 ounces frozen broccoli
  • cups shredded cheddar cheese
  • cup milk
  • 2 tablespoons unsalted butter
  • ½ teaspoon salt (or to taste)
  • 2 tablespoons cream cheese (optional for extra creaminess)

Instructions

  • Prepare the pasta according to the package directions, adding the broccoli to the pot for the last 4 minutes of the cooking time.
  • Drain the pasta and broccoli into a colander.
